    Anytime around Diwali, you'll find golden, translucent, crispy, sticky,  jewel-like jalebis in boxes stacked up high inside mithai shops and Indian grocery stores all around the world. Jalebi, a Persian-origin sweet that is popular in India, is a treat made from batter that's drizzled into hot oil to deep-fry it, and then briefly soaked in a fragrant saffron- and cardamom-infused syrup. Typically, jalebi is made with a fermented batter, or attho, but in more modern times cooks have found a quick shortcut by using baking soda, eno (fruit salt), or lemons to acidify the batter. While making jalebi, the most important thing to keep in mind is to make sure the syrup is warm and to immediately drop the deep-friend jalebis from the oil into syrup so that the jalebis soak it all up. If the syrup is too hot or too cold, the jalebi will not absorb the syrup and you'll end up with soggy jalebis, which will still taste good but won't give you the crispy texture you want. I highly recommend eating them fresh—there truly is nothing like fresh jalebi right out of the syrup!

    I am so lucky to have got to learn these today on TV on Mirch Masala. These are wonderfully tasty, easy to make and absolutely, "TO DIE FOR"! You might think that making jalebis is horribly messy, no! Try this recipe. It works so well! I watched it on TV in the morning and in honour of Mirj Mom's b'day, I made these this afternoon to serve as an after dinner treat! I know quite a bunch of jalebi lovers exist in the world, but I'd love to find one who loves them more than my dad. My dad becomes the happiest man on the planet when served jalebis. He's spent quite a fortune on buying these from outside, NO MORE! Now on, his daughter will be making these for him:) Try these and enjoy is all I can say!

    Jalebis are much-loved sweets in India: You can get a bowl of freshly fried jalebis on the street any day, but they’re also specially prepared for occasions such as weddings, Holi, Diwali and Eid. The best ones are made by halwais (confectionery chefs), and I was given tips on making the perfect jalebi from a halwai who caters for our family events. Though they originated in Persia as a sweet called zulbia, they were brought to India by Persian traders and have now been completely appropriated by us! The perfect jalebi is made with a fermented batter and is crispy outside, a little chewy inside and ever so slightly sour from the fermentation. It’s then dipped in a saffron and cardamom flavored syrup and eaten while still hot. When the fermented batter is fried, chemistry happens and a hollow center forms in the jalebi that gets filled with the saffron flavored syrup. It’s quite a little miracle!
